How to make homemade rolls for appetizers and snacks. SUPER CUTTER!
1.- Prepare the dough. Put all the flour in a bowl. Make a small hole in the center with your hands and add the sugar, yeast, butter and water. Also add the salt in one corner. Mix a little and add only the water. Mix well with the help of a spoon until you cannot continue mixing inside the bowl.
2.- Transfer the dough to the marble. Flour your work surface and pour the dough onto the marble. Bring the dough together with your hands. It’s normal for it to stick to your hands at first. Knead with hands for about 10 minutes. You can also ferment it in a robot. If you have trouble kneading with your hands, alternate periods of 1-minute kneading with 10-minute rest periods.
3.- Let the dough rest. Grease a bowl with a little olive oil. We put the dough inside and leave it covered with plastic film so that the dough does not dry out. Let it stand for about an hour.
4.- Form the rolls. Spread some flour on the marble and pour the dough. We spread the dough with our hands and divide it into portions. First, in the middle. Then into quarters and each of the quarters, divide it in turn into 4. You will get 16 rolls of 50 grams each. Form a ball with each of the parts by folding the dough over it.
5.- Bake the rolls. I have used a cupcake tray. Grease the pan with release spray or butter. Place a muffin in each of the gaps. Fit each muffin into its tin with your hands so they rise evenly. Store the pan in the cold, turned off oven for an hour to allow the rolls to rise again. Take the pan out of the oven and preheat it to 200 degrees with heat up and down. Put the tray on the second of the five levels of the oven and bake for 12 or 15 minutes at 200 degrees with top and bottom heat without a fan. Put a pan with water to moisten the oven.
6.- Unmold the rolls and let them cool on a rack.
If you prefer to prepare the rolls in the pan:
Put some sesame seeds on the base of the pan and cook them covered on a low heat for 10 minutes on each side.
My tips for preparing these homemade rolls:
Before putting them in the oven you can paint them with beaten egg to make them shine. I have dusted them with some rice flour, but you can also do it with wheat flour. It’s more rustic that way.
